GARDEN EGG SAUCE

Garden egg #sauce is one of the best #vegetable sauce cooked with palm oil that can be eaten with boiled yam, boiled potatoes, boiled rice and boiled rice. It can also be eaten with fried plantain, yam, and potatoes.

INGREDIENTS

  • 6 garden eggs
  • 1/2 cup palm oil
  • 1 medium size onion
  • 4 fresh pepper
  • Salt
  • 1 small ogiri okepi
  • 2 medium smoked fish

Before You Cook The Sauce:

  1. Rinse all the garden egg properly and remove their stalk.
  2. Blend, pound or mesh the garden egg.
  3. Cut the onion into small pieces.
  4. Pound the pepper and ogiri okepi in a mortar till smooth or you can cut the pepper into small pieces.
  5. Prepare the smoked fish, if you don’t have some and separate them into small pieces.
  6. Start cooking the yam or any food you will serve with the garden egg sauce.

METHODS

  1. In a clean pot, pour the garden egg puree and cook till all or almost all the water dries up. Skip this if you made your puree by pounding. Set the puree aside.
  2. Pour the palm oil into the dried pot and let it heat until it sizzles when onion is added. Do not bleach it.
  3. When the oil is hot enough, add the onion and fry do 1 minute.
  4. Add the garden egg puree and stir for a bit. Cover the pot and cook for 5 minutes and stir again, repeat until the small water in the puree dries up.
  5. Add the ogiri and blended pepper, a seasoning cube and then salt to taste.
  6. Add the smoked fish, stir, and leave to simmer for 2 minutes. Then it done and ready to serve.
